Total Prep Time: 1 hr. 30 min; Serves: approx. 15

Lemon Glaze

Ingredients:

1 tbsp melted butter

1 tsp lemon peel, grated (lemon zest)

1/2 tsp lemon extract

2 tbsp dark rum (optional)

1 cup confectioner’s sugar

3 tbsp lemon juice

Coconut shavings (optional)

Instructions:

With a wooden spoon, beat lemon peel into themelted butter

Add the lemon extract and rum (optional) to themelted butter

Mix well

Gradually add the confectioner’s sugar, still mixing with the wooden spoon

Beat until smooth

Add 1 tbsp at a time until you have achieved the desired consistency

Mix until smooth (not too thick; not too watery)

Set aside and follow instructions for the LemonPound Cake

Lemon Pound Cake

Ingredients:

1 small box lemon jello

3/4 cup hot water

1 box Duncan Hines Lemon Supreme Cake Mix

2/3 cup Wesson natural oil blend

4 whole eggs

1 tsp vanilla extract

1 tsp lemon extract

1 tsp lemon juice

1 tsp lemon flavoring

Instructions:

Combine the jello and hot water in a glass bowl and allow to dissolve

Mix steadily and allow to cool

Sift the cake mix 3 times

Pour into the electric mixing bowl and adjust speed to 1 ½

Add the jello mixture to the cake mix

Mix well

Add the oil and mix

Add the eggs one at a time; and beat well after  each addition

Add the extracts and juices and continue beating for 4 mins more

PRE-HEAT OVEN TO 325℉ (convection oven)

10.  Pour the batter into a greased pan

11.  Lightly tap the pans onto the counter to settle   the batter

12.   Place on 4th rack in oven

13.   Bake for about 40-50 mins, or until cake begins      ____to pull away from the sides of the pan

14.    At 40 mins start checking the cake with skewer ____sticks (oven temperatures vary)

After Baking:

Remove cake from oven

Leave the cakes in the pan and allow to rest on wire rack for 10 mins

Poke holes in the cake with a skewer while it is still warm

Remove cake from the pan and place on cake dish

Drizzle the glaze over the cake letting it run downthe sides (you can also use a brush to paste the glaze on)

Smooth the glaze evenly on top of the cake while the cake is still warm so that glaze will absorb into the cake via the holes

Garnish cake with coconut shavings (optional)

Allow to cool completely for about 30 mins before slicing
