Hyacinth John Reads at Recipes from Brooklyn & Beyond 2021 Showcase Event

1 coconut grated (medium)

1 stick margarine softened (4 ozs)

1 cup evaporated milk

1 & 1/2 C sugar

3 eggs lightly beaten

1 Tbsp Baking powder 

3 C flour

½ tsp cinnamon

½ tsp Nutmeg

Vanilla flavoring

½ C Raisins or currants (optional)


Preheat oven 350 F

Prepare 2- 8×5” loaf pans by greasing well

Put grated coconut into a mixing bowl

Add milk, margarine and sugar to grated coconut, mix well.

Add eggs, vanilla and raisins

Add all dry ingredients and mix well

Pour into 2 well-greased 8×5” loaf pans

Bake in preheated 350F oven for approximately ¾ hour

 Check with a small skewer for doneness.

Anna influenced me to take pictures of my recipes that I’m going to share with you today. Just wanted to say that I like baking and usually, I’m the person baking for my family, especially Christmas time. So this is one of the recipes that I do and I share with my family and friends.
